Cooking healthy food in a dorm or apartment does not need to be pricey!

Tofu might seem like a daunting food to cook but it sure is delicious. It gives you a whole lot of bang for your buck and definitely keeps me fueled for my active life.

It’s a great staple that you should incorporate into your weekly menu because not only is it cheap, it packs a whole lot of protein in one dish. Lastly, it’s a fabulous ingredient because it takes on the taste of the spices you use!

1 package of firm tofu
1 tomato, diced
1 cup of leeks, chopped
3 gloves of garlic, minced
Half a bag of frozen string beans
3 tablespoons of vegetable oil
2 tablespoons of curry powder
Salt and pepper to taste

1.) Arrange tofu on a plate placed between 3 layers of paper towels. Place a weight or something heavy on top for 20 minutes to release excess moisture.

2.) Cut tofu almost into playing cards. Heat 2 tablespoons of oil in a pan on medium – high heat. Cook on both sides for about 5 a side or until golden brown.

3.) Lower the temperature to about medium-low/low and add leeks, curry powder, the remaining oil, and a little water. Have that cook with the lid for 8 minutes.

4.) Add the tomatoes and string beans. Put the lid on top and have it simmer for 10 minutes or until both vegetables are cooked through.

5.) Lastly, I cooked myself brown rice and ate them both together.
